Yeah, I realize my cheese is going to lose moisture. I just wanted to minimize that loss over the year that it will be aging. I've been coating today. A cream-coated natural rind.... Should be interesting.

LOL, the right one is upside down, because I once skipped turning by accident. Now it is the only one that is out of sync with flipping!
