Mozza Success at last!

Well success at last. I tried one gallon of store bought milk last night, not with the 30 min Mozza recipe but with actual Thermo Bact, and YEAHHHHH!!

I need to learn to read the recipe through better though, I didnt realize how long the recipe was going to take! Started at 11pm, so read mrs KK recipe and made adjusted to it rather then the one in 200 easy cheese.
I think my yeild was a little lousy but, my bacteria was old, hadnt been stored proper, and it was a learning experiance!! So far all taste tests are good.

Question though, I left the curds in a colander lined with cloth over night, the curd around the out side edge turned to mozza, but a large amount on the middle just disapeared into my hot salted whey and was gone.......
from the gallon I had less then 200grams of finished cheese!

Now with snow here I have more time in the house to... mess up the kitchen as my wife says!!
