Hi guys,

Yes, the time has come to throw my current, absolutly useless cheese press out the window. I really should have read more before i wasted $60 on it. Its only now that i realise unless im winding it down every hour it will never constantly apply any pressure! Which i have no way of measuring anyway...

So, i have spent hours now looking at all the threads, ann the designs, about a million photos/plans/designs/tables etc.

I think i have a reasonable idea of the press design, but no i cant draw it. Im not going to make it either. DH is a mechanic, his dad is a Mechanic who specialises in welding and he is an OTT perfectionist... Expect this cheese press to be made from aircraft grade metal, and put together with aeronautical grade bolts, as i know for a fact FIL has thousands of them. I hope no one minds but i have saved all your pictures, plans and notes from all the presses in this forum and will use them to work up our design. I hope i can keep this thread updated with progress (and that FIL doesnt spend years perfecting it!!)

So, any tips, pointers, comments are welcome... Ive read so much its hard to remember it all and if i forget something make sure you point it out!

Now, off to do some math, which im not enjoying!

Does anyone know of a list of recommended psi for different cheeses? Only i dont want a press thats going to press at psi of a cheese im never going to make!
