I was thinking I posted in the right forum?  I think I goofed now looking at the forum...DOH!  It's a pressed cheddar sorry.

It's a two pounder made from two gallons of raw milk (Jersey).

Oh man!  Two months and 5 days into aging and this is by far the best cheese I've made!  In fact it is better then ANY Medium Cheddar I've ever bought too!

And it's only two months old!  WOW!

A friend tried some and couldn't believe how awesome it was.

I'm a total convert now!  Raw Milk is the ONLY way to make cheese!

And it got sealed back up and put back in the cheese cave right after we ate that bit you see cut off.

It was SOOOOOOOOOOOOO  good!  WOW!  I'm floored and can't wait until I make another!  Just have to get to my source for the raw milk and set up a weekend of cheese making.

I wish I had a dozen on the way!  However, the milk is about 2 1/2 hours from me and I only go by the place once in a while.  I could get it locally but I refuse to pay $11/gallon for milk so I wait for the days I go out past the place that sells it for $4.50/g and will get at least 3 gallons when I do :)

Though if I get desperate I can get them to deliver when they come this way.

On a side note though, I'm in the process of designing a double dutch press that my neighbor is going to build out of steel :)  It will allow pressing TWO 10lbs cheeses at once!

I can't wait to try it out ;)

20 gallons of milk isn't that much at all if you own a cow or two.  In fact the Jersey's that I got the milk from for this cheese are producing 12 gallons a day between two of them.

So, in two days you could drink 2 gallons of milk and make 20lbs of cheese!

But that's just part of the equation.  I designed the press so you could make one two pounder or two tens and anything in between :)  I like flexibility.

So you do own cows? That would be great. We city folks are forced to ante up $10/gallon which would make a just one of those 10 pound cheeses a little over the top.  Hey, where's my accountant and tax person? I want to make some cheese!  :o

When I designed my Dutch press, it was to allow ultimate flexibility very similar to what you're doing. No worries about over-stressing anything...just confidence that it will accomplish any job I throw at it.

I wish I owned cows! ;)

However, I do have 20 acres that I could someday get some cows on and begin milking ;)  At the moment though, I have a source of raw milk for $4.50 a gallon so it's not quite as bad as paying what you 'city folks' have to pay! lol
