Pickled Walnuts

Pickled walnuts are a popular British treat with cheese such as on Ploughman's Lunches.

Last summer I picked unripened walnuts with my Dad from a tree out by itself so no infections from other trees whic he then pickled.

They were a little too young and stones were not formed enough. Opened a 6 month old jar last night with some cheese and pear.

They look really good, John. I love pickled walnuts and will happily eat the whole jar.

Now this sounds interesting. Do you have a recipe you are willing to share? How is your Dad BTW. If I recall he was feeling poorly this time last year.
