First taste test at 3 months old.  This is a very nice tasting cheese.  It's still mild but well flavored and has smooth, and elastic paste.  Hopefully I will be able to stay out of the rest until it ages another 3 months!

That looks like a great young provalone! Now hide a chunk for about 6 months to a year and see what it does. Amazingly strong and a really good grating cheese! Very much like a parm once aged and smells like dirty gym socks but wonderful character!

I've already hidden the second wheel in the back of my cave.  Fortunately, I have enough other cheeses coming out to keep my distracted!  :)
