Hi all, im fairly new to the cheese industry and still have lots to learn. My question is how to make a PVA cheese coating...does anyone have some insight and knowledge to share please? :D

Hi there, greetings from The Netherlands, neighborhood of Gouda and Leiden. I'm using PVA coating a lot for my pressed cheeses, just like all the artisan and "factory" Gouda's are treated here. Why would you try to make the coating yourself? Don't you have suppliers for it in SA? Here it is fairly cheap (about 9 euro's per kilo and cheaper in bigger quantities) so for me it would hardly be worthwhile to make it myself, providing that I knew how....

The individual compounds required are likely sold in bulk.

Do you have a factory and industrial engineering experience and just need the chemical expertise to produce coating in volume? If so, send me a PM. If not, please buy the product commercially, as the details to manufacture properly most likely have a too-steep learning curve, starting with sourcing as Tomer mentioned.
