using cheese slurry for innoculation
« on: February 26, 2012, 05:01:06 AM »
I have been working on my goat milk tomme for several months and very happy with the results.  Very happy.  I'll put some pics up in the coming weeks.

Originally I was keen to mimic a cheese called 'Midnight Moon' and what I have made is not very similar but very very flavoursome.

One of the reasons I couldn't make a replica (putting aside the issue of whether or not I should even bother) was that it seems some of the cultures used are probably propriety products that they have selectively bred.

Is it an option to take some of this cheese, blend it up and add to my culture mix?

If so, how would I continue this 'mix' into the future?  Just take some whey, keep it in the fridge then throw it into the next batch?  If so, how much would I need to keep?
