branding the tomme

I am sending these pics by way of a thank you to all involved who helped me create this cheese.  It is without a doubt one of the best cheeses I have made.  So thanks to all who contributed.  The flavour at 3 months is deep and complex and is being very well received at the local farmers' markets.  Its one of those cheeses that when people taste they say that they must have a piece. 

I have also had this branding iron made up that I heat over a butane burner then sear onto the surface of the cheese.  I think it gives a lovely hand made finished touch to the cheese.

I have received much help from many people along the way so if anyone has any specific questions about the make please ask away - it's all (mostly - I did do some thinking myself!) information given to me freely from others so I don't believe I have any ownership over it.

Oh great, now everyone will want to brand their cheeses.  ;)

Nice personalization. The cheeses look good without the brand and special with it.

Seems like a cheese is in order for taking that extra step.

Of course we will want brands like this! I was only wondering yesterday if I could cut out a logo from a piece of plastic and put that in the bottom of the mold to get an impression, but this is much cooler (well, hotter when you actually brand it of course). And congratulations on the cheese - which farmers markets do you sell at? We sometimes go to Brisbane via the Pacific Highway so a detour wouldn't be a bother it the timing was right.

Most of the farmers' markets in the Northern Rivers - Byron, Mullum, Lismore, New Brighton etc.  None in Brissy sorry.  Maybe soon now that I have a beautiful cheese like this!

I have seen cheeses where a 'negative' of the design is placed in the bottom of the mould.  Actually I think I recall coming across a French company on the web that specialises in making them.  The alternative is to get something like a ceramic potters tool that you can use to carve some of the cheese out with before brining.  Take a look at the Bruny Island website - he does this.
