Ellen's Camembert #1-The Workshop Cheese

Took one of Steve Shapson's 3 hour workshops on Sunday.  Wow it was a full house  :D   Some of us got some hands on work but because of the short time it was more of a demo than a hands on get yourself dirty.  But for the first time I was able to observe someone make cheese in person.  It left me with a good feeling that I am doing things right :)  Plus he provided a variety of bloomy cheeses to sample as well as some cultured butter and yogurt.

Everyone took home a single camembert to drain and age as well as complete directions.  I snagged some supplies I wanted.  Steve is only 70 miles from me so it was an easy and fun trip.  Had a great lunch in Cedarburg as well.

The cheese is still draining.  This afternoon I'll unmold and salt it before putting it in the cave.  8)

Guess who forgot her little workshop cheese.  Well I didn't forget it, I just didn't pay attention to the time.

Since this was from the workshop and it's been over a month I thought I better cut into it.

Looks good, it was starting to soften just under the rind so my decision to open it now was good.  The rind is a bit strong for me, but the center is soft and creamy.  Not as good as it should be, but not horrible bitter over ammoniated.

Agreed, looks great!  I let my first batch over ripen.  Sigh. 

Just an excuse to try again ;).

Ellen, spinning?  Me too!  I didn't see a spinning/wool anything thread in the general chatter forum, so wondering if it had been talked about here yet.
