Hi there, I haven't been posting because I've been busy experimenting. I just opened a cheese I started with a piece of Stilton I made earlier then washed it with a strong B.Linen from another cheese and came up with a BEAUTIFUL Smeared Blue cheese that spreads like soft cream cheese with a great balance of a strong Blue flavor and a strong Smeared headiness, like having wine soaked cheese melting in your mouth.
I just hope my notes are good enough to duplicate it.

Very nice looking result!  A cheese for your successful experimentation (actually, the cheese is for experimenting, the success of it is just a bonus! :) )

It's 63 days old, and as long as you like very strong tasting and smelling cheese, which is why I did this, then it is absolutely delicious.

I love to experiment and so far I have only had 1 go bad and that one I'm fairly sure I forget to salt, all the rest have been at least eatable.

It is, it has become my favorite for now. I'm going to try to let it last by just having 1 or 2 slices per night.

I opened my linens infected gorg dolce this week, it was interesting but less tasty then traditional gorg.

How old was it? I inoculated with Blue and just wiped it with the washings of a very strong smear and got good quality of both.

About 9-10 weeks.

Im not saying its bad , I just didnt care for the style.

It is an acquired taste. I prefer strong flavors in everything. I never have to share any of my favorite cheese with anyone, in fact they usually leave the room if I bring it out.
