I'm experimenting with a Cleveland Range Tilting Skillet (SEL-40-T1) for use as a cheese vat / drainage table. 40 gal capacity (150l).... approx. 4' wide x 3' front to back x 1' deep. I'm converting mine from 460v 3phase to 240v single phase. They're an old design, & are made in steam & natural gas, too. It has an electric tilt with a large pour spout on the front, though, I'm thinking of welding in a tri-clover fitting in front at the bottom. With a seive on the inside & a sanitary ball valve on the outside, drainage would be a pleasure.
This should work for pasteurization, as well as cooking. All stainless steel. It's a convenient working height & easy to clean.
My next door neighbor's an industrial process engineer..... we're bouncing around some ideas as to how to automate the controls/cooking cycles. Also, toying with ideas for a cooling loop.
