......... What if after the few weeks needed, I oil the rind and place the cheese in the cave without vacuuming or other thing? Will it dry too much?

mine got quite dry even with RH over 75% :(

But I agree with others - you're very lucky  cheesemaker :) hope your cheese with natural rind turns out good. Keep us posted!
