Modular Cheese House

Greetings all,

I'm cautiously expanding up from hobby-level.....  Wondering if anybody's ever had any thoughts  or experience with using a steel ISBU shipping container for a modular cheese house? 

I'm thinking a 20' container, or possibly two, side-by-side.  Easy to plumb, wire, light, floor, insulate, ventilate, air condition... plus the ability to pick them up & move them.  Modern micro-ceramic exterior coatings, like those available from SuperTherm, make them much more energy efficient.  Also an affordable & sturdy structure.  A 20' container can be had for $2-3000 dependng on location.  They can also be modified w/ any combination of doors & windows.

If two were used, one could be partitioned off at one end & superinsulated for a cave.

I've seen something similar done for aging cured meats, which need a similar environment to a cheese cave. It was a used insulated refrigerator container, and a "CoolBot" had been attached, along with a humidifier. Here's a link for the CoolBot: http://storeitcold.com/

AS always if you are thinking going commercial ask your Dept of Agriculture Dairy Specialist.
Nothing worse than buying something to find out the state will not approve it.
