On page 72 of Ricki Carrolls Home Cheesemaking is a "home cheesemaker" recipe for Potato Cheese. Which is apparently an Amish cheese where the curds are mixed with mashed potatoes before pressing and then aged in a beer bath. I was wondering from all you out there if...
1. Has any one every heard of and/or tasted such a cheese?
2. Has any one tried a beer bath before? That actually sounds intriguing...

Hi Colaly, I don't know if anyone here has tried the potato part, but there has been some discussion of the beer part. Do a search on Chokeberry Stout and you will find a thread on adding beer to cheese.
