My first Manchego!

Made my first manchego today, this is what it looked like coming out of the brine.
Please not the date stamp is extremely inaccurate.

Looks nice. Might wanna change the date though that would confuse the heck out of me!

Looks great!  How big is it?  What kind of milk did you use?

I've been pleased with my manchego-style cheeses made from raw cow's milk.

Thanks folks!
I got about 1 & 1/2 lbs. out of 2 gallons of raw cows milk, plus some really good ricotta.
I cut one quarter open at 5 days and it was very good already!
