is indeed a fantastically flavored cheddar called a chihuahua and featured in 200 Easy...

My speculation" that should my second make had been a cheddar, I would think I had confused the gouda with a cheddar was actually correct.  Never having had a chihuahua before I hadn't realized that it is listed in the cheddar section of 200.

Yours truly, still suffering from a bad case of "Cantwaittilltitus" decided to cut into his second cheese make ever and discovered a fantastically textured and flavored young gouda complete with flexible and pliant paste and very good mouth-feel and taste.

Lesson to be learned, don't walk away when waxing more than one wheel of different makes before they are done and labeled.

So here is the real Gouda.  Needless to say I am thrilled.  One half almost gone the other back in the cave to age.
