Boofer, I am so ashamed.  You are right, especially when I own some pretty good glass: Nikon D70 with 105mm Micro-Nikkor macro lense and others.

Just been lazy and too little room to set-up.  I am going to have to stop making excuses and break out the glass.

You could also try washing the curd a little more - remove/replace more of the whey during the wash.  I started doing that with all my washed curd ones - I honestly don't remember the technical reason for it - but it works.  Certainly it gives me my creaminess, creaminess, creaminess.   :)

MaryJ: Thanks for this tip.  I will try this on my next make.   I just made Gouda make #4 this weekend using yet another recipe instead of tweaking this here #3 because it had ph targets and seemed like an well informed make.  I had a real hard time meeting the ph target just prior to curd wash, and wound up ignoring it although later targets were met and my dough like wheels seem pretty good.

What I was missing was PH100, I found a lot of Extech multimeters, but now I now the type I found the Extech PH100 at a webshop were I bought my external thermostat for my cave. For a 105 euro including shipping...
