Curd Cutter - Parmesan Curd Wand for the Wizard in Me
« on: February 11, 2009, 06:27:21 AM »
Since I didn't make myself a set of 1/4" spaced curd knifes I decided to build one of those cutters used in the Parmesan Pictures. They do make ones similar and sell it at the restaurant supply store but it was $155. So I built my own. The top and bottom circular wires are supposed to be offset.

Neato... let us know how it works out for you.  If nothing else when you grow out your really long white beard and stand on top of a really tall mountain with your pointy cheese wizard hat.. you'll have a righteous scepter as you rain down cheese wizdom on the masses! :)

Thanks guys. I wouldn't bet against the thunder storms we were supposed to have some a few days ago. Now it just rains for the night and is done.

Well Carter, if you are wanting rain, come to Illinois. We had three inches last night and another inch today.
It's really worked out well with my collapsed roof (from the snowfall) at my business.
As for the cheese wand.....beyond cool.
I can't get over how easily you can look at something and then build it.
I am very envious of your talent.
One of these days I need to get a decent welder and start playing. I know this is a skill that comes from practice but I honestly don't know that I will ever be able to actually make something out of nothing. For some reason my mind works more on the "trial by error" method.

Carter that looks really professional, but confused as to how that is supposed to give you a very small curd?  I am assuming that it is used similar to a normal whisk?
Anyway, very nicely made.

Tea, yes it works just like a whisk but fancier...LOL

If you look at the pics of the making of Parmesan from the Hoffman thread it shows they use a similar ball style whisk to chop up the curds. It was easier than building a new set of 1/4" curd knives.
