Title: Can I use a rind from Taleggio as a starter of b.linens?
Post by: vertlook on October 22, 2010, 08:04:59 PM
Hi, I am a new into cheesemaking,
want to do my first Taleggio, I have a little piece of store  bought cheese (also Taleggio), can I use a piece of rind as a starter, like people do with a blue cheeses?
Thanks!

Yes, works same way. Puree and homogenize in 3% brine, and then filter and spray or dunk or wipe on with a rag.

Might get contaminated, so rind might not be exactly the same, but should be close.

Thanks a lot LinuxBoy,
My recipe (from the 200 cheeses book) suggests to add b.linens during milk inoculation, can I do that?
Thanks!

Yes, either milk or surface or both.
