Title: Yoghurt Maker - Meso culture?

Hello,

I am new at making cheese and wondered if I can use a Yoghurt maker to make my own starter culture...

I have freeze dried mesophilic culture which can be used to make "1 litre of mother culture".  However I thought I could use the yoghurt maker with a sprinkling of culture to innoculate a small batch of uht milk. 

Would this work?
Presuming it would, how would I know when the culture is ready? (to be placed in the fridge until I come to use it)

what is the lowest temperature setting of the yogurt maker?

It is automatic, so I cannot adjust it.  When I measured I think it was at about 45c, however I imagine it would have got hotter as the process carried on...

That is too hot for mesophilic. You will need to adjust it to work for mesos. The absolute max for culturing mesos is 37 C, and even that is asking for trouble.

I will stick to using it for Yoghurt and Thermo culture!
