Title: Humidity monitoring and control devices

I'm trying to make a cheese cave using a wine refrigerator and am having some trouble keeping the humidity above 80%. I've found that the humidity is pretty stable around 80% using a pan of water, etc, but even if I use a humidifier to raise the humidity to 85-90% within about 5 minutes after turning off the humidifier the humidity is back down to 80%.

Has anyone had any luck with any kind of control devices to turn on and off a humidifier between 80-90% humidity? (I can't seem to find a humidistat that has a control range above 80%).

Sound perfect and when I talked to them they sounded very knowledgeable and helpful. I should get it next week and will let you all know results after a bit of use.
