Firstly Merry Christmas to all...
I am chasing the forms for the L'Ingot St Nicolas... They are gold 'ingot' in shape and final weight of the cheese are 80-100g. I can find the larger forms called 'Barquette' which are about 160mm long, but I want something only about 100mm (I think!). Unless of course for this cheese simply use the larger forms and cut them in half.
This is a pic of the cheese... http://www.mons-cheese.co.uk/lingotstnicolas/ (http://www.mons-cheese.co.uk/lingotstnicolas/)
Any ideas?
Thanks.
