Title: Cheese Odors

Has anyone tried using one of these in their cheese cave?  Do you think it would harm the cheese?  Thought it might get rid of the odors from the cheeses.

I've heard some people use them in their caves to kill cheese mites , makes sense it would reduce the odors as well.

But I wonder if it would kill beneficial molds as well ?

I agree with Al and jwalker to avoid using this and it comes from a bit of a painful experience.  Back when I started trying to design cave-specific humidifiers I had a nephew that manufactures miniature bi-polar ionizers that were more effective and less toxic than ozone generators and didn't generate the "smell".  Their company sells them for hand sanitizers, mold control in homes, and many other commercial and residential uses.  They're fantastic: smaller than a pack of cigarettes and will kill growing surface mold.  I spent a lot of time designing the humidifiers with the ionizer built in only to find out (after learning a bunch from this forum about bacterial washing and beneficial surface mold) you want to control mold, not kill the good with the bad.  Thanks to the advice I got here (and after doing a through cleaning) my fridge has a very hospitable environment for "good" mold and bacteria without ozone or ion generators.  For odor control you can't beat Arm & Hammer (baking soda).

I have a couple of containers specifically designed for holding Arm & Hammer for fridge odor control.  Don't know why I didn't think of this before.  Thanks John for reminding me.

Gianaclis Caldwell discusses ozone machines in her book Mastering Artisan Cheesemaking.  She mentions it specifically for controlling cheese mites but cautions that it can kill mold.  She uses it in the make room but not the cave.

Yes, that was what drove me to start this thread originally.  I had done some research on these small units but found out they weren't any good for in the cave.  It's only an issue when doing certain cheeses.  I just did a tallegio and that got me looking back at my old threads to see what I could find.  I'll go with the baking soda dispenser on the shelf with the cheese and let you know how it works. :D
