Hi All,

Sorry I forgot to introduce myself before starting to post! How rude  :-[

I'm Sam and I live on the tiny island of Jersey, the home of the Jersey cow.

This looks like a great forum with tons of excellent information. I look forward to learning and sharing.

I also enjoy smoking food and run a small smokehouse business on the side. I've grown chillies over the last 7 years or so.

So cheese, smoking and chillies... There's definitely a tasty product in there somewhere!

I've only made one "cheese" so far, a Queso Blanco (attached). Thoroughly enjoyed making and eating so I can't wait to try some different cultured cheeses very soon!

Hello Sam.  Will be glad to trade you chipolatas for boiled peanuts any time :).  When you get into making more cheese look into cold smoking.  With your background it would be a natural combination.

Update: I just saw your posts on cold smoking and are obviously well equipped (and well versed).  I look forward to reading more of your posts.
