OK, thought I'd start this thread as some of you are making some large cheese batches (http://cheeseforum.org/forum/index.php/topic,567.0.html) and while you can get large stockpots you could rapidly be approaching lifting etc limitations and thus purpose build Cheese Making Vats with drains are the way to go.

But truth be told, I only make cheese in the wine off-season. (Nov-July)
