I was in Lowville New York this last week and stopped at the lowville cheese store. I hit the jackpot they had 16 year old cheddar at 20.00 a pound (that is not bad) as well as sharp 3 and 4 year old cheddar. In all they sold over 75 types of cheese, I bought some of the 16 year old cheddar, they gave a sample and it was quite good, you could feel the crystals in the cheese and it was smooth not grainy. We got back to Oklahoma with a bunch of well aged cheddar, cheese curds, Beer kaese (some sort of like limburger cheese, and smokey onion. They do ship and have samples available, it was a great visit. :)

The 16 year old chedder was smooth, sharp and melted in your mouth and has some crystals which added to the texture but not in a bad way.

Thanks lwybryant! Odd that they don't have the cheesemakers name on it. I wonder what brand it is. I love that you have cheese and packets of Arby's Horsie Sauce in your fridge! What else could a person need?!?
