Title: English Cheddar with Caramelized Onions recipe

We had some fantastic “English Cheddar with Caramelized Onions” from Trader Joe's today.  It looked like the caramelized onions were added during the milling step.  It had a patchy (wish I would have taken a picture before we ate it) look to it.  The ingredients list milk, salt, rennet, cultures, onions, granulated sugar, Muscavada sugar pectin, Balsamic vinegar, lemon, and citric acid.  By the look of the ingredients’ I’m assuming some kind of onion jelly was added to the cheese.  Does that seem right?

I keep seeing lots of cheeses like that on the market but it seems whenever someone tries one it goes south.  Not sure they actually age, or manufacture, those cheeses like we do.  I could be wrong though.

The ingredients list makes me think it is a processed cheese (end result). Either that or all the extraneous ingredients are only related to the caramelized onions.
