Title: Camembert - No White Mold Bloom, Orange Color, Smells Like Blue Cheese

Hi all,
I am new to this board as well as making cheese.
We made a camembert about 2 weeks ago did all the things we were suposed to do, I salted the outside of the cheese ones they were out of the mold then put them on sushi maps in to a container with a small container of water and covered them up. Placed them in to the refrigerator 32-40F. after 10 days and turning them after five days there is no sign of
Blooming but a smell of Blue cheese with slight orange discoloration.
What is wrong ? Is it salvageable/edible?

You Should Read a little more on cheese ripening temps yours are wrong you need a fridge at about 50 to 55 degrees
you shloud have a johnson controller on that fridge or some other controller to get the right temps in your cheese cave
Do some more reading on cheese making I hope your cheese turns out ok
