Edgwick Farm

We are very pleased to announce that New York State issued a part 2 permit to us this morning to make and sell farmstead goat's milk cheese!  It has been many years of planning, a year of construction on our microdairy and creamery and all the licensing bureaucracy that goes with it, not to mention endless testing of cheese recipes.  Hurricane Irene and then the October nor'easter delayed us but we finally made it! 

Of course, we dried off all the goats last week but we will start kidding in midJanuary and start cheese production at the end of January.

We have 43 does kidding from January to April, predominantly Nubians with a handful of Alpines.  We have a 30 gallon JayBee Precision pasteurizer cheese vat.  We will be making both fresh and aged cheeses for sale at Hudson Valley farmer's markets and restaurants.
