From US based CulinaryCookware (http://www.culinarycookware.com/) I ordered a pack of 10 French Matfer Bourgeat brand Wire Cheese Or Butter Cutters (http://www.culinarycookware.com/wire-for-cheese-and-butter-cutter-with-plastic-handles.html).
I ordered the shorter 300 mm/11-7/8" ones for 10 for USD10.20 plus shipping rather than the only other choice was an extra long 800 mm/31.5" for USD13.59 plus shipping.
I have no long thin knife to cut my wheels so up to now use a thick knife which sticks to the cheese and thus I have to push hard to cut them.
And for member Carter, no I didn't get a free pen with my order :D.

Thanks for posting these. I'm contemplating a purchase now.

Baby Chee, you are welcome, simple tool but the cheapest I'd found online in US was @ USD5 + 5 shipping for one! So 10 for USD10 was a no-brainer.
Plus it was only an add on as I ordered a Salometer (http://cheeseforum.org/forum/index.php/topic,2081.0.html), long spatula (http://cheeseforum.org/forum/index.php/topic,2077.0.html) as a Curd Knife, and long skimmer type ladle (http://cheeseforum.org/forum/index.php/topic,2073.0.html) from the same webstore.

Nice. Have you tried them on cheese yet?
I was wondering about making those myself. How thick is the wire in your cutters? I assume it's stainless steel?
-
I was thinking stainless steel fishing wire or guitar strings on a wooden dowel.
-
Debi, me too ;)
A nice exercise in wood turning, I'm thinking. I would have some scrap rosewood that could be used for this...
-
Thanks for the tip, John. I will be looking into that myself. I've been using a metal pizza cutter. Those might make cutting blocks of wax easier too, without my having to buy a plug-in heated wax cutter.
-
Riha, the website doesn't say but I assume they are stainless steel as otherwise in humid climate here in Houston they would rust quite quickly. Nope haven't used yet, soon ;). I don't have a tool for measuring how thick the wire is. So here's a picture of a flex test. From above picture you can see wire is already partly bent, handles are solid plastic but small and total wire length is 300 mm/11-7/8". Hope it gives you a feel for the wire's thickness/strength, they are thin but not that thin like you get on some fine fishing line. I couldn't see reeling this onto a fishing reel.
I'd have never found them in that webstore if after choosing my other items I hadn't had a quick search on that website on word "cheese".
Excuse reflection of potlights in kitchen ceiling.

They appear thicker than I first thought.

I wonder how the Stainless Steel wire i used for my curd knife (http://cheeseforum.org/forum/index.php/topic,726.msg4548.html#msg4548) would do in this capacity...
I will give it a try.
I have about 570feet of this left over....
lol
-
Well Wayne you have plenty for back up! ;)
-
If someone would like to try this wire, I would be happy to coil up 6ft of my wire and send it free of charge.
(Otherwise, It will never get used....)
-
I have a roll of fishing wire I still haven't gotten around to using! I wonder how that'd work if it were tied to a hack saw? Maybe a nice chrome one?
-
I would just make sure it's stainless steel.
-
Ah good point! I forgot about that - DUH!
-
I am sending out 1 wire. I am happy to cut more samples and get it in tomorrow mail.
-
I have seen these marble things in stores with wire choppers for cutting cheese. I wondered how well they worked. Very pricey!
-
These arrived to me a few days back. I love them. Extremely practical and cheap!
-
UPDATE : These are very nice, but they definitely fatigue and break quickly. After 2 wheels I just snapped my first. Luckily they are relatively inexpensive.
-
Baby Chee,
I would love to know how my spool of wire would perform in comparison.
Can I send you a length of wire?
-
Sure. I'm always cutting the cheese.
:-\ Hmm. Sounds wrong.
-
The wires look like they are easily replacable. I haven't tried mine yet. Nothing ready to cut right now.
-
Ok, Wayne. I got the envelope a few minutes ago and took pictures. Sorry I can't get my camera to work well on close up detail of the wire, but here's what I've got for you...

The wire you provided and the wire I purchased look and feel identical. No size difference that I can tell.
While taking the pictures, I figured a person could easily save a buncha bux if they have a couple simple wood handles, use a table saw to cut a center groove, and then merely wrap wire and tie tight. You just have to redo the wire every few cheese wheels, but that wire must be $2 for lots of length, so you could have dozens of these across the years for less than the price of 12 plastic ones from a store.
-
Hey Wayne, is your offer still available? I just crossed this thread looking for cheese wire cutters.
