This little fella has jumped out of my cave so many times I am surprised it is still in one piece! Must have been the wax. Anyway I got tired of chasing it across the kitchen and decide to eat the little problem child. I made this one on April 11th so I didn't expect to much. This one is only a 450 gram cheese it has a slightly bigger brother that is 1 kg I will save for another few months as it is staying put.
Anyway. I was surprised at how much kick this little guy had at only 4 months old. It was very dry and sharp. Maybe the small size? It did have a few cracks in it from all the boucing around it has done and a few small dry mold spots under the wax where the cracks where. Oddly enough it didn't spread.
Here's lunch! 4 month old cheddar, 8 month old pepperoni and 8 month old tapinade. It was good!

Zenith - I have a bunch of the dexter russel knives with flag handles I love them. Also makes it easy to identify when I am out doing picnics and such as I am the only one with flag knives - no arguments!
siegfriedw - Yes the pepperoni is home made also. I think is is the last of this batch ...
