Title: Hello From Davis, CA

I'm a student at UC Davis right now, going to graduate in about 2 years. I'm hoping to go into small scale organic dairy (cattle, goats, and sheep) and cheese making once I do.

I was wondering if anyone knew of some good international cheese making apprenticeships I could do or apply for after I graduate? I'm afraid I don't have a lot of background in artisan cheese making but what I do know is it's really a learn by doing art. I'd like to get out of the States if possible and see the world. If anyone knows someone I could get in touch with, it'd be much appreciated!

Emily, you might contact Gigi Cazaux, who did a master's thesis (http://cheeseforum.org/forum/index.php/topic,7271.msg56916.html#msg56916) on the concept of terroir, investigating it with respect to Wisconsin artisanal makers.  She's back in France, now, but probably available through FB or one of the business social sites.  Very nice young woman.
