After researching this cheese last Dec 2008 for this thread (http://cheeseforum.org/forum/index.php/topic,500.0.html), a couple weeks ago I bought myself some nice Dubliner cheese from, yes local WalMart's wholesale store called SamsClub and hid it in the back of the fridge.

It is imported to here in USA via Irish dairy products exporter Kerrygold (http://www.kerrygold.com/) from Ireland where made, Kerrygold's Dubliner Cheese info page here (http://www.kerrygold.com/intl/index.jsp?1nID=93&2nID=98&pID=103&nID=111).

Dubliner manufacturer is Carbery (http://www.carbery.com/index.asp?PageID=31) whose website says Dubliner was launched in 1996 and they now have a whole array of different Dubliner cheeses. Carbery even has a website just for Dubliner cheese (http://www.dublinercheese.ie/).

Went to have some for supper as family all out (& thus wouldn't want some ;)) and found mice had already been at my semi-expensive 7 USD/pound, 16 USD/kg Dubliner, well turns out it was eldest daughter who said she made some cheese on toast with it (sacrilege) and that it was really good!

Anyway, pictures below of cheese at cold fridge temperature, including close up of where I broke some off with fork to show physical qualities. Packaging was a waxy-plastic material that could be micro-perforated? Colour is slightly off white, like in package, not yellow like last picture (my poor camera skills/camera). Medium hard, crumbly, strong old cheddar - lightly parmesan taste and yes some very strong nice taste tiny calcium lactate crystals ;D.

I'm assuming this Cheddar Board is correct place for this cheese or is it a different type? I have no idea how to make it (hint - challenge)?

I don't have a recipe for this one but I have some interesting information on cultures in Irish cheddar.

You have to be part microbiologist to love cheese making ;D. And to think, I abandoned the lab field to take up cheese making as my new life's pursuit.

Funny how that works Zenith - I hated chemistry in college - could have been the arrogant prof though.
