Title: train wreck

well i finally had my first train wreck with cheese making, this morning i tossed the jack cheese. just to many mistakes made in the original process. started to notice undesirable molds (dark and hairy) and the cheese just was not drying out enough. as mentioned before the surface was rough and not easy to care for. i did break the cheese open and sampled it, not bad. will remake this cheese again soon using the knowledge i gained from this disaster :-(

Whew you had me worried when I read the title of this post.
Well I guess as long as you have learnt some lessons then the "train wreck" it was worth it.
Made some halloumi yesterday, and it too didn't turn out quitr right either.  I will post my results later when I have completed everything.
