Smilingcalico, I envy you! The state of California is about 10 times bigger than my country, but I guess the variety of cheeses in California must be a 100 times bigger!

Nice, Is it a completly lactic make or semi?   do you fortify the milk with cream?

It's semi lactic, no cream added. Yes, we do have a large variety of cheese!
