Hi everyone
Just registered here, I'm trying to do some ripened hard or semi hard cheese. I recently bought my first cultures. I will use the Danisco's MA4001 as a starter and the package contains 5 CDU. Can anyone tell me how many liters of milk can I process with these 5 DCU? Do I have to keep the cultures in the fridge or is better in the freezer when the package is not opened? and after opened?
Thanks for your help. I know probably this info is at the forum, but there is so much information here... and really difficult to find...

I'm sorry I don't have an answer for how to use the culture that you have purchased, but can answer that most powdered cultures are best kept in the freezer.  I use ziploc bags to keep as much air and moisture out as possible and they last for quite some time.
