Just tried a great soft ripe cheese from WI. This little 8 oz cheese is a cows milk cheese that has a rich assertive flavor with a light tan rind that is washed with a cultured solution and ged in the cellars for three weeks. Very earthy flavor with tones of apple cider, mushrooms and toasted sesame. I highly recomend this for anyone who enjoys the soft french style cheeses.

I prefer soft french style cheeses, but I think too hard to make yet for a beginner like me. I'll look for it in my nearby stores. Sadly, these are large mega chain HEB & Krogers as I live in massive suburbia.
