I made a Mesquite smoked Coffee and Jaggery Cured Duck Bacon this week and it is extremely tasty.
Started another batch yesterday
As well I made a Hoisin Triple Sec Brine for the duck legs and wings

That looks some good I'll tell ya! mmmmmm! Duck fat roasted potatoes are great. Add some melted cheese sauce and you're away! :)
