hope this is the right place for this.well on the way to re stocking my cave gave it a bit of a hiding over Christmas, with no complaints.hope the photos come out OK.top is ch feta with olives - blue stillton - jacks -cheddar - Camembert

1-yes 2-10c to 15c with 80% humidity, 3-all cheese are sealed, 4-yes, 5- i have waxed, and don't find any difference in sealed bags,i find vacuum sealing quick and easy.

Thanks bundy, looks like perfect cave for cheeses, dedicated fridge so can set not too cold like regular household fridges set at, and radiant style so doesn't pull all the humidity out like forced air style fridges do.

Now I just need to 1) find one (most here in US are forced air style), 2) convince wife that we need a 3rd fridge (second is full of soda pops, beer and white wine), and 3) sell the radiant freezer style cave and external thermostat (http://cheeseforum.org/forum/index.php/topic,197.0.html) that I couldn't keep the humidity low enough in to make room.

i know how you feel i had to wait till old fridge failed before better half would let me invest in what i needed, am using g fridgemate thermastat controller things working ok

Well while we've all been chattering away, Bundy's been making cheese.  Well done, that looks great.  Don't let the friends and family know that it's stocked again, or it will be gone in no time.
CH I've seen his setup, and it is indeed a good one.

That looks great!  Is the Camembert sealed?  I notice you have yeast in the door, does that do ok at the cave temp?  We've been freezing ours.

Hi the Camembert is is in rapt in Camembert paper.
the yeast we use for different pastries my wife makes seems OK at that temp.
