Does anyone here have a recipe for the corn relish we have here in Australia? I dont knoe if you have in other places, or if its the same or different! Ut has corn, capsicum, celery and mustard seeds in it and its a clear bright yellow relish. No, ive never made relish before, i LOVE corn relish though!

I love corn relish but no one else here does!
Ingredients
Serves: 16
1 1/2 cups white vinegar
1/4 cup sugar
3/4 teaspoon dry mustard
1/4 teaspoon salt
2 spring onions or young small onions thinly sliced (videlia onions are great in this)
1/2 small orange capsicum, seeded and diced
1/2 small yellow capsicum, seeded and diced
1/-1/2 cup corn kernals cut from the cob or one can of corn
Optional - toadd heat add a few tablespoos hot chilis or jalepenos
Instructions
In a glass, stainlees steel or enamel no reactive saucepan, combine vinegar, sugar, mustard and salt.
Simmer 5 minutes. If fresh corn add corn and stir for 1 minute until tender. Do not cook canned corn.
Remove from heat.
Stir in onion and capsicum. Add corn if canned
Refrigerate in a covered container for up to 1 week.

Yes you can and you can use a hot pack and boiling water bath or pressurer canner
Half-pints or Pints
15 minutes 0 - 1,000 ft
20 minutes 1,001 - 6,000 ft
25 minutes Above 6,000 ft
