Just tried a 6 month aged Manchego. Hope this is the right section for it.

Was wondering what you guys would eat with it, some good recipes, facts, stuff like that

I don't understand the question. Why would you mess up a good cheese with other food.. ;D
P.S. Sorry never cooked with manchego before.
