So I gathered the goods this weekend for a Double Cream Camemebert, including two half-pint bottles of local Jersey cow creamline whipping cream. Must have been a bit too enthusiastic with shaking one of the bottles, when I opened it to pour it into the vat - nothing came out. I had whipped cream! So scooped the bottle out into a mason jar, added another half-pint of whole milk and shook away. Knocked out a half pound of butter before I knew it. Lightly salted, resting in the fridge, we'll eat it up on soda bread as part of our annual St. Patricks dinner.
