Title: seeking JayBee Precision vat mentor

We purchased a used JayBee Precision 30 gallon vat last year and with our creamery near completion, fired it up for the first time yesterday.  We are looking for someone who has experience with this vat to ask some technical questions about using it for cheesemaking after pasteurization.  Can anyone on the forum help us out?

Hi , I was wondering how you made out ? how is your Creamery going ?  I am near Watertown NY and we plan to open in May , we also just bought a used Jaybee vat.
