Title: Stainless Steel pots or Al-clad

I'm shopping for a new pot to hold my milk during cheese making, which I will set inside a 5 gallon stock pot.
Stainless steel or aluminum pot?  Does it matter?

Stainless steel, Aluminium is no good for cheesemaking.

here here Aluminum is for truck bodies and cans. Stainless is the only choice, also look at fastening of the handles, imports use aluminum or white metal rivets

You best choice is stainless. All Clad makes a great product and I use them exclusively in the kitchen but they are expensive Have a look at this link..

I don't know.  I think i will take my copper pot over my stainless steel any day.  The amount of control I have with this pot is amazing on my gas stove.   No more running hot water and all that.  My gas is cheaper than my electric hot water too.  I got this off ebay a few years back for about $100.  It holds 4 gallons very nicely even though I normally only do 2 gallons at a time. The copper on the pot is 3/16 thick too.  Look on ebay for copper candy kettles.

Nice pot, Real Parmigiano is done in copper always. I have a feeling most mortals don't think about copper, due to its cost,  but it is a great way to go. Gotta love e Bay!

Aluminium is still a no no
