Hey I found this site with some interesting cheese recipes http://www.dairyfoodsconsulting.com/recipes.shtml (http://www.dairyfoodsconsulting.com/recipes.shtml)
but they are for 100 gal batches and seem pretty complicated. Does anyone have a simpler recipe for Caerphilly cheese?

Yep, Tea in Queensland posted a Caerphilly Recipe and her results here (http://cheeseforum.org/forum/index.php/topic,238.0.html).
