I made the 200recipe colby with floc multiplier 5 (turnef out to 40min) I just took it out from pressing and it felt slmost that in the ptessing the cheese gained in volume ie it rose:-o . pressing weight was 20kg for the 17cm mold. is that rising something normal? thx. mbox
