Title: Pressing Stage Ending In Middle Of Night?

When making my cheese at the final pressing 12hrs the time is about 1pm,so that means that i have to get up in the middle of the night to take the weights of.is it OK to leave the weights on till  i get up 5.30 6am.or will the extra few hours effect the final product?

Same here, leave in until morning, you could lighten up the weights a little if you want. I find how you age the cheese and rate of drying to be more important than weight and duration pressing. Have fun!

just bought Fridgemate temp controller for old fridge will let you know how things go.
