Title: Storing Roquefort cultures
Post by: CharlieB on May 01, 2014, 10:18:40 PM
Does any one have any advice on storing Roquefort cultures? Here in the UK you only seem to be able to buy the culture in packets for 500 litres of milk at a cost of about £10 but it gives no info on storage or propagating as you do with freezing the mesophilic mother cultures. I'm not sure that I will make a lot of blue cheese so am wondering if it is worth buying the Roquefort culture.

I keep them in the freezer like the cultures at -18C and use them for about a year. Same for PC, BL Geo and Proprionic bacteria.
It's a pretty high price though....
