Title: Soft & Gooey Goat

I want to do a Geo only (with none or minimal PC) semi-lactic make with fresh goat milk.
Looking for a soft paste, very soft & thin "brainy" rind.
In addition to inoculating with Geo, I plan to spray with a rind morge of Vermont Creamery's "Cremont" (one of my favs)

Which strain of Geo would give me a good result?
